This is a stunning vibrant salad. It is filled with rocket, oven dried tomatoes, manchego, pine nuts and pomegranate seeds. Served with saffron yoghurt.

It is refreshing and tangy. We just love the grilled asparagus. The presentation is sensational. A good salad to go with the mains.
