Red curry is an all time favourite of mine, but I haven't quite mastered how to make it from scratch (a work in progress). Fortunately, there are lots of packet or jar curry pastes out there to act as an easy base for home made curries.
Valcom Authentic Thai Red Curry Paste is one that I've tried. It is easy to use - just cook the curry paste for a few minutes, then mix in some coconut milk. And it tastes pretty good - not quite restaurant quality, but pretty good.
