The other night I made Peking Duck from scratch and one of the ingredients used was Maltose.

I could not find this online at any of the major supermarkets, but managed to get it at a large Asian store.

It is made of rice, malt and water, and is a bit similar to honey, only much thicker, and not as sweet.

This cost $1.95 for a 500 g jar at MCQ Supermarket Warehouse in Coventry village, Morley, WA.

An excellent source for rubbing on poultry to make the skin go brown.
